Creative Salad Recipes

I have shared on my blog numerous times that I am not much of a cook... I am not a cook at all to be completely honest here and I'll admit that!

Sure, there are the handful of go-to recipes that I can whip up easily and that taste alright, so that I won't be starving, however, if I have the choice, I much rather prefer going to a restaurant, ordering take-out OR letting my boyfriend cook - he loves it and is really good at it, lucky me!!

Now, with the colder season I have definitely noticed that I am NOT eating as much fresh fruit, vegetables and greens as I used to during the warmer months and far less than I should be eating to guarantee for my vitamin and nutrients intake.

So this is why I opted for consciously preparing more salads to serve this purpose: healthy, vitamin-packed and delicious! However, since I am seriously lacking imagination in the cooking department, I, of course, turned to Pinterest to pin some new salad recipes - and let me tell you, I found some amazing ones!!

I am sharing four recipes here today. Please keep in mind, these are NOT mine (god, I wish I was that creative with food haha), I am just curating a cool and yummy selection, please click on the link under each picture to get to the full recipe.

1. Haloumi, Zucchini, Tomate and Pearl Couscous Salad

Had to mention this first because it is made with Haloumi and Haloumi is a delicious cheese and cheese is life - that's all. 

Ingredients (serves 4):


  • 1 tbs olive oil
  • 1 garlic clove
  • 2 cups pearl couscous
  • 4 cups stock (or bone broth if not vegetarian)
  • 250g cherry tomatoes, quartered
  • 2 zucchini, cut into 2-3mm thick slices
  • 200g haloumi, cut into 3mm thick slices
  • 1 lemon, juice and zest
  • 1/2 cup basil, shredded
  • 1/2 cup flat leaf parsley, finely chopped
  • 1 birds eye chilli, finely sliced
  • salt and pepper to taste
2. Fall Harvest Gorgonzola and Apple Salad

Had to share because if this isn't the most perfect salad to whip up last minute for a Thanksgiving gathering - I don't know what is.

Ingredients:
  •  1 Sweet Kale Chopped 
  •  1 Pink lady apple, thinly sliced 
  •  5 Ounces of crumbled Gorgonzola cheese
  •  1 Pear, thinly sliced 
  •  6 Oz of cubed pancetta
  •  1 Cup of Whole Pecans
  •  ½ Cup of Pomegranate seeds 
  •   5 Sage leaves

3. Taco Pasta Salad

This recipe basically sounds like everything my dreams are made of.

Ingredients:
  • 1 tbs olive oil
  • 250g minced meat
  • 1 onion
  • 1 paket taco seasing mix
  • 250g pasta of your choice
  • 250g tomatoes
  • 1 cup of coriander
  • 100g taco sauce mild
  • 1 cup corn 
4. Detox Cauliflower Salad

Ingredients:
  •  raw cauliflower rice 
  • apples
  • mint and parsley
  • Shallots, super thinly sliced
  • Roasted chickpeas
  • Big chunks of buttery avocado
  • honey-olive oil-mustard dressing
  • Lime juice and zest

I already got all the ingredients and will be doing a big bowl of the Fall Harvest salad to bring to work tomorrow - I'm sure my team will absolutely go crazy for it!

That Taco Pasta salad is definitely next on my list!
